Salvestrols are compounds produced by plants to protect them from invaders including yeasts. These compounds have been observed to only be present in substantial amounts in crops that are organically grown. When crops are sprayed they are being artificially protected, so plants produce far less of their natural protection mechanisms (Salvestrols).
